Vinification

 

Late harvest.
Crushing of the stems before harvest to optimize the maximum sugar amount.
Princess ferments until it reaches 14% alc.
The alcoholic fermentation stops naturally. The wine matures for 12 months in oak barrels of 1 tone.

Complex aromas of red and black fruits that someone find in a forest.
On the palate, the wine shows incredible concentration, black fruit, vanilla, nuts, moderate sweetness and impressive acidity with endless aftertaste!
